Recipe: Delicious bubbly peach ice cream

What better way to celebrate the return of summer than with a sparkling refreshment straight from the South of Norway? "Ice-cool" is conjured up under the sun by Kaffebørsen Presterud, the oldest coffee shop in the southern idyll of Flekkefjord.

"Ice-cool" is an icy fusion of peach, lime and mint that's perfect for drowsy summer days.

You will need:

  • 4 cl sugar brine with a little mint and lime (peel and juice)
  • 6 cl Peach tea (black tea with peach)
  • Farris and ice cubes

Here's what you do:

  1. Strain the sugar brine into a shaker with ice cubes and peach tea.
  2. Shake well until cold.
  3. Pour into a glass filled with ice cubes and top with some farris and mint leaves.
