Recipe: Mazagran à la Kongsberg

Fresh, sweet and lightly sparkling, this coffee drink is inspired by the Portuguese Mazagran and offers an exciting combination of lemon, sugar and coffee.

Mazagran is the name of what is considered "the original iced coffee", named after an Algerian fort where it was first consumed by French legionaries in the mid-20th century. This recipe - conjured up at Kåre João Café & Bar in Kongsberg - is inspired by the Portuguese version of Mazagran, which often has a dash of rum added.

You will need:

  • Two cups of filter-brewed coffee (Brazilian Fazenda Barreiro works well)
  • Juice from one lemon
  • 5-6 level tablespoons of sugar
  • Soda water
  • Isbiter
  • Lemon slices

Here's what you do:

  1. Brew enough coffee for cups and mix it with lemon juice and sugar.
  2. Pour into a jug with lemon slices and top up with ice cubes and soda water to taste.
  3. Serve in a glass with ice cubes.
