Mazagran is the name of what is considered "the original iced coffee", named after an Algerian fort where it was first consumed by French legionaries in the mid-20th century. This recipe - conjured up at Kåre João Café & Bar in Kongsberg - is inspired by the Portuguese version of Mazagran, which often has a dash of rum added.
You will need:
- Two cups of filter-brewed coffee (Brazilian Fazenda Barreiro works well)
- Juice from one lemon
- 5-6 level tablespoons of sugar
- Soda water
- Isbiter
- Lemon slices
Here's what you do:
- Brew enough coffee for cups and mix it with lemon juice and sugar.
- Pour into a jug with lemon slices and top up with ice cubes and soda water to taste.
- Serve in a glass with ice cubes.
