The principle is very simple; hot water is poured evenly over freshly ground coffee. Yet a lifetime can go by in the pursuit of the perfect brew. The importance of detail helps to make hand brewing a fascinating exercise. And that's what makes the Kalita Wave brewing range unique. One small detail.

The Brewers Cup is the name of the world championship in hand-brewed coffee. In last year's competition, won by American Erin McCarthy, the winning coffee was brewed on Kalita. The winner's trophy was a gold-plated Kalita pouring pot.

At home in Japan, Kalita has long been a coffee authority. The brand, which has been around since 1958, offers an impressive range of coffee and tea-related equipment for the home and business markets. However, it is only in recent years, and mainly through the Wave hand brewer series, that coffee enthusiasts in Norway have become familiar with Kalita.

With a hand brewer, you can influence the flavors in your coffee cup to a greater extent. Results are determined by variables such as time, pouring method and water temperature. Not to mention the equipment. In Kalita's case, the secret detail is quite simple: the bottom of the filter holder is flat. This means that water and coffee are evenly distributed, which in turn results in an even brew. Many say it's the easiest way to a clean and balanced cup of coffee. But it's up to each individual to decide.

Brewing proposals

Use six grams of coffee per deciliter of water. The grind can be slightly finer than filter ground. Rinse the filter with hot water to remove the papery taste and preheat the pot in one operation. Fill the filter with coffee and whisk it all together with freshly boiled water. Continue pouring water in a smooth and steady motion until you have enough for the amount of coffee you are using.

Detailed recipe:

  • Start the clock and pour in about 70 grams of water.
  • Let the coffee swell for 30 seconds.
  • Slowly pour up to 200 grams of water. Allow the water to sink almost completely.
  • Pour up to 300 grams at about 1:30. Let the water sink again.
  • Pour up to 400 grams at about 2:30.
  • Total brewing time 3:30 - 4:00
