What better way to celebrate the return of summer than with a sparkling refreshment straight from the happy south of Norway? "Ice-cool" is conjured up under the sun by Kaffebørsen Presterud, the oldest coffee shop in the southern idyll of Flekkefjord.

Ice cold from Flekkefjord

'Ice-cool' is an icy fusion of peach, lime and mint that's perfect for drowsy summer days.

This is what you need:

- 4 cl sugar brine with a little mint and lime (peel and juice)
- 6 cl Peach tea (black tea with peach flavor)
- Farris and ice cubes

Here's what to do: Strain the sugar brine into a shaker with ice cubes and peach tea. Shake well until cold. Pour into a glass filled with ice cubes and top with some farris and mint leaves.

In the 16th and 17th centuries, the Dutch sailed into Flekkefjord to trade timber and fish in this small southern idyll. The small wooden houses in the cobbled streets of the Hollenderbyen district were built by local fishermen in the 19th century, who had made their fortune from Dutch traders hungry for herring. Later, the Dutch came to Flekkefjord to trade stone, which they used to fill their harbors. Parts of the Dutch capital, Amsterdam, are actually built on timber from Flekkefjord, while stone from Flekkefjord is the foundation for the major airport, Schipol.

Exhale on a tandem train ride along the Flekkefjord Railway. Here you can pedal your way along the track while experiencing the contrast between beautiful scenery and dark tunnels. The trip back and forth between Flekkefjord station and Bakkekleivi stop takes about three hours at a leisurely pace.
